Ingredients:
Desiccated coconut 1 cup, milk 2 1/2 cups, semolina 1 tbsp, butter 1 tbsp, cream 1 cup, eggs 2, condensed milk 1 tin.
Method:
. Mix milk and coconut in a bowl and set aside for a little while.
. Heat butter in a frying pan and fry semolina in it.
. When semolina gives off aroma, add coconut mixture.
. Cook over low flame until it thickens. remove from flame and cool.
. Beat eggs with electric beater. add condensed milk and 1/2 cup cream and beat more.
. Add remaining cream semolina and coconut mixture. mix well.
. Grease a baking tin whit butter and pour the pudding mixture in it. bake in a pre-heated over at 180 C for 20 minutes.
. Serve delicious coconut pudding well-chilled.
