King fish (fillet) 4 pieces, banana leaves 4, fresh red chillies (chopped)2, garlic (chopped) 1 clove, fresh coriander (chopped) 3 tbsp, lemons 2, finely cut lemon rind 2 lemons, coconut milk 400 ml, sesame oil 2 tbsp, fish sauce 1 tsp, soya sauce 1 tbsp, ginger (chopped) 2 tbsp, salt, olive oil as required.
Method:
. Mix ginger, lemon rind, lemon juice, soya sauce, red chillies, coriander, salt, coconut milk, sesame oil and fish sauce in a bowl.
. Blend this mixture in a blender and take out in a bowl.
. Marinate fish pieces in it for a little while.
. Cut banana leaves into square pieces and lightly heat over flame. place each fish piece in the center of a banana leaf and pour a little of the mixture over it.
. Wrap leaf into a square. seal leaf with a toothpick.
. Prepare the remaining leaves in the same way.
. Place fish on baking tray and pour a little oil over it.
. Place baking try in pre-heated over and bake at 260 C for 15 minutes.
. Serve delicious fish wrapped in banana leaves hot along with leaves.
